Pecan Pie Balls

Ingredients:

  • 1 cup chopped pecans
  • 1 1/2 cups crushed graham crackers
  • 1/2 cup brown sugar
  • 1/2 cup maple syrup or light corn syrup
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1/2 cup powdered sugar (for rolling)

Directions:

  1. In a large mixing bowl, combine the chopped pecans, crushed graham crackers, brown sugar, cinnamon, and salt.
  2. Add the maple syrup and vanilla extract, mixing until well combined and the mixture holds together when pressed.
  3. Roll the mixture into 1-inch balls using your hands.
  4. Place the balls on a tray and chill in the refrigerator for 30 minutes to set.
  5. Roll each ball in powdered sugar before serving for a sweet finish.
  6. Store any leftovers in an airtight container in the fridge.
