- Ingredients:
- 1 1/2 cups all-purpose flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1/2 cup creamy peanut butter
- 1/4 cup granulated sugar
- 1/4 cup packed brown sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup mini Reese’s Pieces candies
- 1/4 cup peanut butter (for stuffing)
Directions:
- Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a medium bowl, whisk together flour, baking soda, and salt. Set aside.
- In a large bowl, beat together the softened butter, creamy peanut butter, granulated sugar, and brown sugar until light and fluffy (about 3 minutes).
- Beat in the egg and vanilla extract until fully combined.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined.
- Gently fold in the mini Reese’s Pieces candies.
- To form the stuffed cookies, scoop a tablespoon of dough and flatten it in your hand. Place 1/2 teaspoon of peanut butter in the center and fold the dough around it, sealing the peanut butter inside. Roll into a ball and place on the prepared baking sheet.
- Repeat with the remaining dough and peanut butter, spacing the cookies about 2 inches apart.
- Bake for 10-12 minutes, or until the edges are lightly golden. Allow to cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
