One Pot Pizza Pasta

Ingredients:

5 oz package pepperoni

1 lb ground Italian sausage

1 onion, diced

1 green pepper, diced

3 garlic cloves, minced

1 tbsp Italian seasoning

10 oz jar pizza sauce

2 oz canned tomato paste

2 cups beef broth

3 cups dry pasta (penne, wheels, or macaroni)

2 cups shredded mozzarella cheese

Directions:

Heat olive oil in a large pot over medium heat. Sauté diced onions and green peppers until soft, about 5 minutes. Add minced garlic and sauté for 1 minute.

Add Italian sausage and pepperoni to the pot. Cook until the sausage is no longer pink.

Add pasta, beef broth, tomato paste, pizza sauce, water, and Italian seasoning. Stir to combine.

Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for 15 minutes, stirring once or twice, until the pasta is tender.

Remove from heat and stir in 1 3/4 cups of mozzarella cheese. Let sit for 5 minutes, then top with the remaining cheese and serve.
