One-Pot Chicken Parmesan Pasta

Ingredients:

  • 1 lb boneless, skinless chicken breasts, diced
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 can (28 oz) crushed tomatoes
  • 3 cups chicken broth
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 8 oz penne pasta
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • Fresh basil for garnish (optional)
  • Salt and pepper to taste

Directions:

  1. Heat olive oil in a large pot over medium heat. Add diced chicken and cook until browned, about 5-6 minutes.
  2. Add minced garlic and cook for an additional 1-2 minutes, until fragrant.
  3. Pour in crushed tomatoes, chicken broth, oregano, and basil. Stir to combine, then bring to a simmer.
  4. Stir in penne pasta, cover, and cook for 10-12 minutes, stirring occasionally, until the pasta is tender and cooked through.
  5. Stir in mozzarella and Parmesan cheese until melted and well combined. Season with salt and pepper to taste.
  6. Garnish with fresh basil and extra Parmesan, if desired, before serving.
