  • 1 9-inch pie crust, pre-baked
  • 1 cup granulated sugar
  • 3 tbsp cocoa powder
  • ¼ cup all-purpose flour
  • ¼ tsp salt
  • 2 cups whole milk
  • 3 egg yolks, beaten
  • 2 tbsp unsalted butter
  • 1 tsp vanilla extract
  • Whipped cream, for topping

Directions:

  1. In a medium saucepan, whisk together sugar, cocoa powder, flour, and salt.
  2. Slowly add milk while whisking constantly to prevent lumps.
  3. Cook over medium heat, stirring constantly, until the mixture thickens and begins to boil, about 8-10 minutes.
  4. Remove from heat and quickly whisk in the beaten egg yolks.
  5. Return the mixture to the stove and cook for 2 more minutes, stirring continuously.
  6. Remove from heat and stir in butter and vanilla extract until smooth.
  7. Pour the chocolate custard into the pre-baked pie crust.
  8. Let cool at room temperature, then refrigerate for at least 2 hours to set.
  9. Serve with a dollop of whipped cream on top.
