Ingredients:
- 1 9-inch pie crust, pre-baked
- 1 cup granulated sugar
- 3 tbsp cocoa powder
- ¼ cup all-purpose flour
- ¼ tsp salt
- 2 cups whole milk
- 3 egg yolks, beaten
- 2 tbsp unsalted butter
- 1 tsp vanilla extract
- Whipped cream, for topping
Directions:
- In a medium saucepan, whisk together sugar, cocoa powder, flour, and salt.
- Slowly add milk while whisking constantly to prevent lumps.
- Cook over medium heat, stirring constantly, until the mixture thickens and begins to boil, about 8-10 minutes.
- Remove from heat and quickly whisk in the beaten egg yolks.
- Return the mixture to the stove and cook for 2 more minutes, stirring continuously.
- Remove from heat and stir in butter and vanilla extract until smooth.
- Pour the chocolate custard into the pre-baked pie crust.
- Let cool at room temperature, then refrigerate for at least 2 hours to set.
- Serve with a dollop of whipped cream on top.
