Instructions:
- Prepare the Okra:
- If using fresh okra, wash and chop it into small pieces. If using frozen okra, thaw and chop it.
- Mix Ingredients:
- In a large bowl, combine the chopped okra, cornmeal, flour, onion, green bell pepper (if using), green onions, egg, salt, black pepper, garlic powder, and cayenne pepper. Mix until well combined.
- Heat the Oil:
- In a skillet, heat about 1/4 inch of oil over medium heat.
- Form the Patties:
- Using your hands, form the mixture into small patties (about 2-3 inches in diameter).
- Fry the Patties:
- Once the oil is hot, carefully place the patties in the skillet. Fry for about 3-4 minutes on each side, or until golden brown and crispy. Do not overcrowd the pan; fry in batches if necessary.
- Drain:
- Once cooked, transfer the patties to a paper towel-lined plate to drain excess oil.
