Okra Patties

Ingredients:

  • 2 cups fresh or frozen okra (thawed if frozen, chopped)
  • 1 cup cornmeal
  • 1/2 cup all-purpose flour
  • 1/4 cup onion (finely chopped)
  • 1/4 cup green bell pepper (finely chopped, optional)
  • 1/4 cup green onions (chopped)
  • 1 large egg
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon cayenne pepper (optional, for heat)
  • Oil (for frying)

Instructions:

  1. Prepare the Okra:
    • If using fresh okra, wash and chop it into small pieces. If using frozen okra, thaw and chop it.
  2. Mix Ingredients:
    • In a large bowl, combine the chopped okra, cornmeal, flour, onion, green bell pepper (if using), green onions, egg, salt, black pepper, garlic powder, and cayenne pepper. Mix until well combined.
  3. Heat the Oil:
    • In a skillet, heat about 1/4 inch of oil over medium heat.
  4. Form the Patties:
    • Using your hands, form the mixture into small patties (about 2-3 inches in diameter).
  5. Fry the Patties:
    • Once the oil is hot, carefully place the patties in the skillet. Fry for about 3-4 minutes on each side, or until golden brown and crispy. Do not overcrowd the pan; fry in batches if necessary.
  6. Drain:
    • Once cooked, transfer the patties to a paper towel-lined plate to drain excess oil.
  7. Serve:
    • Enjoy the okra patties warm, either on their own or with a dipping sauce like ranch or aioli.

Tips:

  • For added flavor, you can mix in some shredded cheese or spices of your choice.
  • These patties can also be baked in the oven at 400°F (200°C) for about 20-25 minutes, flipping halfway through for a healthier option.

Enjoy your tasty okra patties!
