Nutty Oatmeal Protein Cookies

These Healthy Cookies are a guilt-free treat that combines wholesome ingredients like oats, almond flour, and natural peanut butter for a satisfying snack. With a touch of cinnamon and optional chocolate chips, they’re a great way to satisfy your sweet tooth while fueling your body.

Ingredients:

  • 1 1/2 cups rolled oats
  • 1/2 cup almond flour
  • 1/4 cup honey or maple syrup
  • 1/4 cup natural peanut butter or almond butter
  • 1/4 cup dark chocolate chips (optional)
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 egg

Directions:

  1. Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a large bowl, combine the rolled oats, almond flour, cinnamon, salt, and baking soda.
  3. In a separate bowl, whisk together the egg, honey (or maple syrup), peanut butter (or almond butter), and vanilla extract until smooth.
  4. Add the wet ingredients to the dry ingredients and mix until well combined. Fold in the chocolate chips if using.
  5. Scoop tablespoon-sized portions of dough and roll them into balls. Place them on the prepared baking sheet and gently flatten with your fingers or the back of a spoon.
