Ingredients:
- 1 cup crushed graham crackers
- 1/4 cup unsalted butter, melted
- 1/4 cup granulated sugar
- 2 ripe bananas, sliced
- 1 cup heavy whipping cream
- 1/4 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 box (3.4 oz) instant vanilla pudding mix
- 1 1/2 cups cold milk
- Whipped cream and banana slices for garnish
Directions:
- In a bowl, combine the crushed graham crackers, melted butter, and granulated sugar. Press this mixture into the bottoms of 6 small dessert cups to form the crust.
- In a separate bowl, whip the heavy cream, powdered sugar, and vanilla extract until soft peaks form. Set aside.
- In another bowl, whisk the instant pudding mix and cold milk until thickened, about 2 minutes.
- Gently fold half of the whipped cream into the pudding mixture.
- Layer banana slices over each graham cracker crust, then spoon the pudding mixture on top.
- Chill the mini pies in the fridge for at least 2 hours.
- Before serving, top with whipped cream and garnish with additional banana slices.
