No-Bake Mini Banana Cream Pies

Ingredients:

  • 1 cup crushed graham crackers
  • 1/4 cup unsalted butter, melted
  • 1/4 cup granulated sugar
  • 2 ripe bananas, sliced
  • 1 cup heavy whipping cream
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 box (3.4 oz) instant vanilla pudding mix
  • 1 1/2 cups cold milk
  • Whipped cream and banana slices for garnish

Directions:

  1. In a bowl, combine the crushed graham crackers, melted butter, and granulated sugar. Press this mixture into the bottoms of 6 small dessert cups to form the crust.
  2. In a separate bowl, whip the heavy cream, powdered sugar, and vanilla extract until soft peaks form. Set aside.
  3. In another bowl, whisk the instant pudding mix and cold milk until thickened, about 2 minutes.
  4. Gently fold half of the whipped cream into the pudding mixture.
  5. Layer banana slices over each graham cracker crust, then spoon the pudding mixture on top.
  6. Chill the mini pies in the fridge for at least 2 hours.
  7. Before serving, top with whipped cream and garnish with additional banana slices.
