No-Bake Homemade Crunch Bars

Ingredients:

  • 2 cups crispy rice cereal
  • 1 cup smooth peanut butter
  • 1/2 cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1 cup chocolate chips (milk or dark)
  • 1/2 cup chopped nuts or mini marshmallows (optional)

Directions:

  1. In a large mixing bowl, combine the crispy rice cereal and chopped nuts or mini marshmallows (if using). Set aside.
  2. In a saucepan over low heat, melt the peanut butter and honey (or maple syrup), stirring until smooth. Remove from heat and stir in the vanilla extract.
  3. Pour the peanut butter mixture over the rice cereal and stir until well combined.
  4. Line an 8×8-inch baking dish with parchment paper. Press the mixture into the dish evenly, using a spatula or your hands to compact it.
  5. In a microwave-safe bowl, melt the chocolate chips in 30-second intervals, stirring in between until smooth.
  6. Pour the melted chocolate over the pressed mixture and spread it evenly. Allow the chocolate to set at room temperature or refrigerate for quicker results.
  7. Once set, cut into bars and enjoy!
