Ingredients:
- 2 cups crispy rice cereal
- 1 cup smooth peanut butter
- 1/2 cup honey or maple syrup
- 1 teaspoon vanilla extract
- 1 cup chocolate chips (milk or dark)
- 1/2 cup chopped nuts or mini marshmallows (optional)
Directions:
- In a large mixing bowl, combine the crispy rice cereal and chopped nuts or mini marshmallows (if using). Set aside.
- In a saucepan over low heat, melt the peanut butter and honey (or maple syrup), stirring until smooth. Remove from heat and stir in the vanilla extract.
- Pour the peanut butter mixture over the rice cereal and stir until well combined.
- Line an 8×8-inch baking dish with parchment paper. Press the mixture into the dish evenly, using a spatula or your hands to compact it.
- In a microwave-safe bowl, melt the chocolate chips in 30-second intervals, stirring in between until smooth.
- Pour the melted chocolate over the pressed mixture and spread it evenly. Allow the chocolate to set at room temperature or refrigerate for quicker results.
- Once set, cut into bars and enjoy!
