No-Bake Chocolate Eclair Cake

  1. Ingredients:
    • 2 packages of graham crackers
    • 2 cups heavy whipping cream
    • 1 cup powdered sugar
    • 1 teaspoon vanilla extract
    • 2 cups chocolate pudding
    • 1 cup milk
    • 1 cup semi-sweet chocolate chips
    • 1 tablespoon unsalted butter
    Directions:
    1. In a mixing bowl, whip the heavy cream until soft peaks form. Gradually add the powdered sugar and vanilla extract, continuing to whip until stiff peaks form.
    2. In a separate bowl, whisk together the chocolate pudding mix and milk until well combined.
    3. In a 9×13 inch dish, layer graham crackers at the bottom.
    4. Spread half of the chocolate pudding mixture over the graham crackers, followed by half of the whipped cream mixture.
    5. Repeat the layers with the remaining graham crackers, pudding, and whipped cream.
    6. In a small saucepan, melt the chocolate chips and butter over low heat, stirring until smooth.
    7. Pour the melted chocolate over the top layer of whipped cream.
    8. Refrigerate for at least 4 hours or overnight to allow the layers to set.
