Ingredients:
- 4 bone-in pork chops
- 2 tablespoons olive oil
- 1 tablespoon butter
- 1 cup mushrooms, sliced
- 3 cloves garlic, minced
- 1/2 cup chicken broth
- 1/2 cup heavy cream
- 1 teaspoon fresh thyme, chopped
- 1/2 cup Swiss cheese, shredded
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Directions:
- Preheat the oven to 375°F (190°C).
- Season both sides of the pork chops with salt and pepper.
- Heat olive oil in a large oven-safe skillet over medium-high heat. Add the pork chops and sear for 3-4 minutes on each side, or until golden brown. Remove the pork chops from the skillet and set aside.
- In the same skillet, melt the butter and add the sliced mushrooms. Sauté for 4-5 minutes until the mushrooms are browned and tender.
- Add the minced garlic and cook for another 1 minute until fragrant.
- Pour in the chicken broth and stir to combine, scraping up any browned bits from the bottom of the skillet.
- Stir in the heavy cream and chopped thyme, bringing the mixture to a simmer. Let it cook for 2-3 minutes until it thickens slightly.
- Return the pork chops to the skillet and spoon some of the mushroom sauce over the top. Sprinkle with shredded Swiss cheese.
- Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the pork chops are cooked through and the cheese is melted and bubbly.
- Remove from the oven and garnish with fresh parsley before serving.
