Mom’s Best Peanut Brittle

Ingredients:

  • 1 cup granulated sugar
  • 1/2 cup light corn syrup
  • 1/4 cup water
  • 2 cups unsalted peanuts (raw or roasted)
  • 1/4 teaspoon salt
  • 1 tablespoon unsalted butter
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda

Directions:

  1. Grease a baking sheet or line it with parchment paper.
  2. In a medium saucepan over medium heat, combine the sugar, corn syrup, and water. Stir until the sugar dissolves.
  3. Once the mixture comes to a boil, stop stirring and let it cook until it reaches a light amber color (about 250°F or 120°C on a candy thermometer).
  4. Add the peanuts and salt to the mixture. Stir well and continue to cook until the temperature reaches 300°F (150°C).
  5. Remove the saucepan from heat and quickly stir in the butter, vanilla extract, and baking soda. The mixture will bubble up.
  6. Pour the hot mixture onto the prepared baking sheet and spread it out evenly with a spatula.
  7. Let the brittle cool completely, then break it into pieces. Store in an airtight container.
