Ingredients:
- 1 cup granulated sugar
- 1/2 cup light corn syrup
- 1/4 cup water
- 2 cups unsalted peanuts (raw or roasted)
- 1/4 teaspoon salt
- 1 tablespoon unsalted butter
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking soda
Directions:
- Grease a baking sheet or line it with parchment paper.
- In a medium saucepan over medium heat, combine the sugar, corn syrup, and water. Stir until the sugar dissolves.
- Once the mixture comes to a boil, stop stirring and let it cook until it reaches a light amber color (about 250°F or 120°C on a candy thermometer).
- Add the peanuts and salt to the mixture. Stir well and continue to cook until the temperature reaches 300°F (150°C).
- Remove the saucepan from heat and quickly stir in the butter, vanilla extract, and baking soda. The mixture will bubble up.
- Pour the hot mixture onto the prepared baking sheet and spread it out evenly with a spatula.
- Let the brittle cool completely, then break it into pieces. Store in an airtight container.
