Mini Cannoli Cups

These Mini Cannoli Cups are a fun and easy twist on the classic cannoli. With a crisp, cinnamon-sugar pie crust cup and a creamy, ricotta filling, they’re the perfect bite-sized dessert for any gathering!

Ingredients:

For the Filling:

1 container (15 oz) whole-milk ricotta cheese

½ cup powdered sugar

2 tbsp granulated sugar

1 tsp finely grated orange or lemon zest

½ tsp vanilla extract

For the Cannoli Cups:

1 box (2 count) refrigerated pie crusts, softened

3 tbsp turbinado sugar (raw sugar)

1 tsp ground cinnamon

For Garnish:

¼ cup miniature semisweet chocolate chips or finely chopped pistachios

Additional powdered sugar for dusting

Directions:

Preheat the Oven

Preheat your oven to 425°F (220°C).

Prepare the Pie Crusts

Lightly flour a work surface and unroll the pie crusts. Sprinkle each crust evenly with turbinado sugar and ground cinnamon. Use a rolling pin to gently press the sugar and cinnamon into the dough.

Cut and Shape the Pastry Rounds

Using a 2½-inch round cookie or biscuit cutter, cut out as many rounds as possible from the pie crusts. Gently press each round into an ungreased mini muffin tin to form cups. Re-roll the dough and cut more rounds until you have about 48 mini cups.

Bake the Cannoli Cups

Bake the pie crust cups for 10 minutes, or until golden brown. Let them cool in the pans for 15 minutes, then carefully remove and transfer to a wire rack to cool completely. ⏲️

Prepare the Ricotta Filling

In a large mixing bowl, beat together the ricotta cheese, powdered sugar, granulated sugar, zest, and vanilla extract with an electric mixer on medium speed until smooth and creamy. Transfer the filling to a zip-top resealable bag, seal it, and refrigerate until ready to use.

Assemble the Cannoli Cups

Just before serving, remove the filling from the refrigerator. Snip a small corner off the bag and pipe about 1 tablespoon of filling into each cooled cannoli cup.

Garnish and Serve

Sprinkle the tops of the filled cannoli cups with mini chocolate chips or chopped pistachios. Dust with additional powdered sugar for a classic finish. Serve immediately and enjoy! 🍥
