Ingredients:
- 1 pound ground beef or turkey
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 1 can (10 oz) diced tomatoes with green chilies
- 2 cups cooked rice
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1 cup shredded cheddar cheese
- 1 cup salsa
- Salt and pepper to taste
- Fresh cilantro, chopped (for garnish)
Directions:
- Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish.
- In a large skillet over medium heat, brown the ground beef or turkey. Drain any excess fat.
- Add the chopped onion and minced garlic to the skillet. Cook until the onion is translucent.
