Merry Christmas Jam

Ingredients:

  • 4 cups mixed berries (strawberries, raspberries, and blueberries)
  • 2 cups granulated sugar
  • 1/4 cup fresh lemon juice
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1 packet (1.75 oz) fruit pectin (such as Sure-Jell)

Directions:

  1. In a large pot, combine the mixed berries, granulated sugar, and lemon juice. Let the mixture sit for about 30 minutes to allow the berries to release their juices.
  2. Add the vanilla extract, cinnamon, nutmeg, and ginger to the pot, stirring to combine.
  3. Place the pot over medium heat and cook, stirring frequently, until the sugar dissolves and the mixture comes to a boil.
  4. Once boiling, stir in the fruit pectin and continue to boil for an additional 1-2 minutes, stirring constantly, until the jam thickens.
  5. Remove the pot from heat and skim off any foam that may have formed on the surface.
  6. Pour the hot jam into sterilized jars, leaving about 1/4 inch of headspace at the top. Wipe the rims of the jars with a clean cloth to ensure a proper seal.
  7. Process the jars in a boiling water bath for 5-10 minutes to seal them properly. Remove and let the jars cool completely on a clean kitchen towel.
  8. Once cool, check the seals by pressing the center of the lid; it should not pop back. Store in a cool, dark place.
