Ingredients:
- 4 cups mixed berries (strawberries, raspberries, and blueberries)
- 2 cups granulated sugar
- 1/4 cup fresh lemon juice
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon ground ginger
- 1 packet (1.75 oz) fruit pectin (such as Sure-Jell)
Directions:
- In a large pot, combine the mixed berries, granulated sugar, and lemon juice. Let the mixture sit for about 30 minutes to allow the berries to release their juices.
- Add the vanilla extract, cinnamon, nutmeg, and ginger to the pot, stirring to combine.
- Place the pot over medium heat and cook, stirring frequently, until the sugar dissolves and the mixture comes to a boil.
- Once boiling, stir in the fruit pectin and continue to boil for an additional 1-2 minutes, stirring constantly, until the jam thickens.
- Remove the pot from heat and skim off any foam that may have formed on the surface.
- Pour the hot jam into sterilized jars, leaving about 1/4 inch of headspace at the top. Wipe the rims of the jars with a clean cloth to ensure a proper seal.
- Process the jars in a boiling water bath for 5-10 minutes to seal them properly. Remove and let the jars cool completely on a clean kitchen towel.
- Once cool, check the seals by pressing the center of the lid; it should not pop back. Store in a cool, dark place.
