Mac and Cheese Meatloaf Casserole

    • Ingredients:
      • For the Meatloaf Layer:
        • 1 lb ground beef
        • 1/2 cup breadcrumbs
        • 1 egg
        • 1/4 cup milk
        • 1/2 cup onion, finely chopped
        • 2 cloves garlic, minced
        • 1/2 tsp salt
        • 1/4 tsp black pepper
        • 1/2 cup ketchup
      • For the Mac and Cheese Layer:
        • 2 cups elbow macaroni, cooked and drained
        • 2 tbsp unsalted butter
        • 2 tbsp all-purpose flour
        • 1 1/2 cups milk
        • 2 cups shredded cheddar cheese
        • 1/2 tsp mustard powder
        • Salt and pepper to taste
        • 1/2 cup breadcrumbs (for topping)
        • 1 tbsp melted butter (for topping)
    • Directions:
      1. Preheat Oven: Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.
      2. Prepare Meatloaf Layer: In a large mixing bowl, combine ground beef, breadcrumbs, egg, milk, onion, garlic, salt, and pepper. Spread the meatloaf mixture evenly in the bottom of the baking dish. Spread ketchup over the meatloaf layer.
      3. Bake Meatloaf Layer: Bake for 20-25 minutes or until the meatloaf is mostly cooked through.
      4. Make Cheese Sauce: While the meatloaf is baking, prepare the cheese sauce. In a saucepan, melt butter over medium heat. Stir in flour and cook for 1-2 minutes. Gradually whisk in milk, bringing the mixture to a simmer. Add shredded cheese and mustard powder, stirring until the cheese is melted and the sauce is smooth. Season with salt and pepper.
      5. Combine with Pasta: Add cooked macaroni to the cheese sauce, stirring to coat the pasta.
      6. Assemble Casserole: Pour the mac and cheese layer over the partially cooked meatloaf. In a small bowl, mix breadcrumbs with melted butter and sprinkle over the mac and cheese layer.
      7. Bake: Return casserole to the oven and bake for an additional 15-20 minutes, or until the top is golden and bubbling.
