Loaded Bacon Cheeseburger Tacos

Ingredients:

  • 1 lb ground beef
  • 8 slices of bacon, cooked and crumbled
  • 1 tablespoon olive oil
  • 1/4 cup onion, diced
  • 1 tablespoon mustard
  • 1/4 cup ketchup
  • 1/4 cup BBQ sauce
  • 1/4 cup pickles, diced
  • 1 cup shredded cheddar cheese
  • 8 small flour tortillas
  • 1 cup shredded lettuce
  • 1/4 cup sour cream
  • 1/4 cup tomatoes, diced
  • Salt and pepper to taste

Directions:

  1. Heat olive oil in a skillet over medium heat. Add the diced onion and cook until soft, about 3 minutes.
  2. Add the ground beef to the skillet and season with salt and pepper. Cook until browned and fully cooked, about 8 minutes.
  3. Stir in the mustard, ketchup, and BBQ sauce, mixing well to coat the beef evenly. Let simmer for 2 minutes, then remove from heat.
  4. Warm the flour tortillas on a dry skillet or in the microwave.
  5. Assemble the tacos: start with a layer of shredded lettuce on each tortilla, followed by the beef mixture, crumbled bacon, shredded cheddar cheese, diced tomatoes, and pickles.
