Light and Airy French Crullers with a Sweet Honey Glaze

These elegant French Crullers are the epitome of pastry perfection. Ingredients:

  • 1 cup water
  • 1/2 cup unsalted butter
  • 1 tablespoon sugar
  • 1/4 teaspoon salt
  • 1 cup all-purpose flour
  • 4 large eggs
  • 1/4 teaspoon vanilla extract
  • Vegetable oil, for frying
  • 1/2 cup honey
  • 1 tablespoon unsalted butter (for glaze)
  • 1 teaspoon lemon juice (for glaze)
  • 1/2 teaspoon vanilla extract (for glaze)

Directions:

  1. In a medium saucepan, combine water, butter, sugar, and salt. Bring to a boil over medium-high heat, stirring occasionally.
  2. Once the mixture reaches a boil and the butter is melted, remove the saucepan from the heat. Add the flour all at once and stir vigorously until the dough forms a smooth ball and pulls away from the sides of the pan.
  3. Allow the dough to cool slightly, then add the eggs, one at a time, beating well after each addition. Continue mixing until the dough is smooth and glossy. Stir in vanilla extract.
  4. Heat vegetable oil in a deep fryer or large pot to 375°F (190°C). While the oil is heating, transfer the dough into a piping bag fitted with a large star tip.
  5. Pipe the dough into the hot oil in a cruller shape—make a ring by piping the dough into a circular pattern. Fry for 3-4 minutes on each side, or until golden brown and crisp.
  6. Remove the crullers from the oil and drain on paper towels.
  7. For the honey glaze, in a small saucepan, combine honey, butter, lemon juice, and vanilla extract. Heat over low heat until the butter is melted and the glaze is smooth.
  8. Dip the warm crullers into the honey glaze and let excess drip off. Allow the glaze to set before serving.
