Lemon Sugar Cookies are a delightful treat that balances the sweetness of sugar with the refreshing zest of lemon. The bright citrus flavor paired with a slightly crispy edge and chewy center makes them the perfect bite-sized indulgence.

  1. Ingredients:
  • 2 1/2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 1/2 cups granulated sugar, divided
  • 1 large egg
  • 1 tablespoon lemon zest
  • 1/4 cup fresh lemon juice
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon lemon extract (optional)
  • 1/4 cup sparkling sugar (for rolling)

Directions:

  1. Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper and set aside.
  2. In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.
  3. In a large bowl, cream together the butter and 1 cup of granulated sugar until light and fluffy, about 2-3 minutes.
  4. Beat in the egg, lemon zest, lemon juice, vanilla extract, and lemon extract (if using). Mix until well combined.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Roll the dough into 1-inch balls and roll each ball in the remaining 1/2 cup of granulated sugar. Then, roll each cookie ball in sparkling sugar for a little extra crunch and shine.
  7. Place the cookie balls onto the prepared baking sheet about 2 inches apart.
  8. Gently flatten each cookie ball with the bottom of a glass or your fingers.
  9. Bake for 10-12 minutes, or until the edges are golden and the centers are set.
  10. Allow the cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
