- Ingredients:
- 2 1/2 cups all-purpose flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup unsalted butter, softened
- 1 1/2 cups granulated sugar, divided
- 1 large egg
- 1 tablespoon lemon zest
- 1/4 cup fresh lemon juice
- 1 teaspoon vanilla extract
- 1/2 teaspoon lemon extract (optional)
- 1/4 cup sparkling sugar (for rolling)
Directions:
- Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper and set aside.
- In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.
- In a large bowl, cream together the butter and 1 cup of granulated sugar until light and fluffy, about 2-3 minutes.
- Beat in the egg, lemon zest, lemon juice, vanilla extract, and lemon extract (if using). Mix until well combined.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Roll the dough into 1-inch balls and roll each ball in the remaining 1/2 cup of granulated sugar. Then, roll each cookie ball in sparkling sugar for a little extra crunch and shine.
- Place the cookie balls onto the prepared baking sheet about 2 inches apart.
- Gently flatten each cookie ball with the bottom of a glass or your fingers.
- Bake for 10-12 minutes, or until the edges are golden and the centers are set.
- Allow the cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
