Ingredients:
- 2 cups leftover stuffing (prepared)
- 1 cup cooked turkey, shredded or chopped
- 1 egg, beaten
- 1/4 cup grated Parmesan cheese
- 1/4 cup breadcrumbs (or as needed)
- 1 tablespoon fresh parsley, chopped
- 1 teaspoon sage
- 1/2 teaspoon garlic powder
- 1/4 teaspoon onion powder
- Salt and pepper to taste
- 1-2 tablespoons olive oil (for frying)
- Optional: Herb gravy for serving
Directions:
- Preheat your oven to 375°F (190°C).
- In a large bowl, combine the leftover stuffing and cooked turkey. Add the beaten egg, Parmesan cheese, breadcrumbs, parsley, sage, garlic powder, onion powder, salt, and pepper. Mix everything together until well combined. If the mixture feels too wet, add a bit more breadcrumbs to help it bind together.
- Scoop about 1-2 tablespoons of the mixture and roll it into a ball. Place the balls on a baking sheet lined with parchment paper.
- Heat olive oil in a skillet over medium heat. Once the oil is hot, carefully place the stuffing balls into the skillet and cook for 2-3 minutes on each side, or until they are golden brown and crispy. Work in batches if necessary.
- After frying, transfer the stuffed balls to the prepared baking sheet and bake in the oven for 10-12 minutes to ensure they are heated through and crispy.
