- Indian Chicken Biryani
- Ingredients:
- 2 cups basmati rice
- 1 lb chicken, cut into pieces
- 1 large onion, thinly sliced
- 2 tomatoes, chopped
- 4 cloves garlic, minced
- 1-inch piece ginger, grated
- 1/2 cup plain yogurt
- 1/4 cup cooking oil or ghee
- 2 teaspoons biryani masala (or garam masala)
- 1 teaspoon cumin seeds
- 1 teaspoon coriander powder
- 1/2 teaspoon turmeric powder
- 2-3 green chilies, slit lengthwise (optional)
- 4 cups water
- Salt, to taste
- Fresh cilantro and mint leaves, chopped (for garnish)
- Fried onions (for garnish, optional)
Directions:
- Rinse the basmati rice under cold water until the water runs clear. Soak the rice in water for about 30 minutes, then drain.
- Heat oil or ghee in a large pot over medium heat. Add cumin seeds and let them sizzle.
- Add the sliced onions and sauté until golden brown. Reserve some for garnishing.
- Stir in the minced garlic, grated ginger, and green chilies. Cook for 1-2 minutes until fragrant.
- Add the chicken pieces and cook until they are browned on all sides.
- Mix in the chopped tomatoes, yogurt, biryani masala, coriander powder, turmeric powder, and salt. Cook until the tomatoes are soft and the oil starts to separate from the mixture.
- Add the drained rice to the pot, followed by 4 cups of water. Bring to a boil, then reduce the heat to low. Cover the pot and cook for about 20 minutes or until the rice is fully cooked and water is absorbed.
- Once cooked, fluff the biryani with a fork. Garnish with chopped cilantro, mint leaves, fried onions, and serve hot with raita or salad.
