  2. Ingredients:
  • 2 cups basmati rice
  • 1 lb chicken, cut into pieces
  • 1 large onion, thinly sliced
  • 2 tomatoes, chopped
  • 4 cloves garlic, minced
  • 1-inch piece ginger, grated
  • 1/2 cup plain yogurt
  • 1/4 cup cooking oil or ghee
  • 2 teaspoons biryani masala (or garam masala)
  • 1 teaspoon cumin seeds
  • 1 teaspoon coriander powder
  • 1/2 teaspoon turmeric powder
  • 2-3 green chilies, slit lengthwise (optional)
  • 4 cups water
  • Salt, to taste
  • Fresh cilantro and mint leaves, chopped (for garnish)
  • Fried onions (for garnish, optional)

Directions:

  1. Rinse the basmati rice under cold water until the water runs clear. Soak the rice in water for about 30 minutes, then drain.
  2. Heat oil or ghee in a large pot over medium heat. Add cumin seeds and let them sizzle.
  3. Add the sliced onions and sauté until golden brown. Reserve some for garnishing.
  4. Stir in the minced garlic, grated ginger, and green chilies. Cook for 1-2 minutes until fragrant.
  5. Add the chicken pieces and cook until they are browned on all sides.
  6. Mix in the chopped tomatoes, yogurt, biryani masala, coriander powder, turmeric powder, and salt. Cook until the tomatoes are soft and the oil starts to separate from the mixture.
  7. Add the drained rice to the pot, followed by 4 cups of water. Bring to a boil, then reduce the heat to low. Cover the pot and cook for about 20 minutes or until the rice is fully cooked and water is absorbed.
  8. Once cooked, fluff the biryani with a fork. Garnish with chopped cilantro, mint leaves, fried onions, and serve hot with raita or salad.
