Ingredients:

Directions:
- Preheat oven to 325°F (163°C). Grease a 9-inch springform pan.
- In a bowl, combine graham cracker crumbs, melted butter, and sugar. Press the mixture into the bottom of the pan to form the crust. Bake for 8-10 minutes and set aside.
- In a large bowl, beat the cream cheese and sugar until smooth. Add the eggs one at a time, mixing well after each addition. Stir in honey and vanilla extract. Fold in the chopped pistachios. Pour the cheesecake filling over the prepared crust.
- Bake the cheesecake for 50-60 minutes, or until the center is set. Remove from the oven and let cool.
- For the baklava topping, combine the chopped pistachios, walnuts, and cinnamon. Brush the phyllo dough sheets with melted butter, layering them over the cooled cheesecake. Spread the nut mixture evenly between every 2-3 phyllo layers.
- Bake for an additional 15-20 minutes, or until the phyllo dough is golden and crispy. Drizzle the remaining honey over the top of the baklava.
- Let cool before serving.
