Honey Pineapple Salmon

  1. Ingredients:
  • 4 salmon fillets (6 oz each)
  • 1 cup fresh pineapple, chopped
  • 1/4 cup honey
  • 2 tablespoons soy sauce
  • 1 tablespoon Dijon mustard
  • 1 tablespoon rice vinegar or apple cider vinegar
  • 2 cloves garlic, minced
  • 1/2 teaspoon grated fresh ginger (optional)
  • Salt and pepper, to taste
  • 1 tablespoon olive oil
  • Fresh cilantro, for garnish (optional)

Directions:

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it with olive oil.
  2. In a medium bowl, whisk together the pineapple, honey, soy sauce, Dijon mustard, rice vinegar, minced garlic, and grated ginger (if using). Set aside to let the flavors combine.
  3. Season the salmon fillets with salt and pepper on both sides. Heat olive oil in a large skillet over medium-high heat.
