- Ingredients:
- 4 salmon fillets (6 oz each)
- 1 cup fresh pineapple, chopped
- 1/4 cup honey
- 2 tablespoons soy sauce
- 1 tablespoon Dijon mustard
- 1 tablespoon rice vinegar or apple cider vinegar
- 2 cloves garlic, minced
- 1/2 teaspoon grated fresh ginger (optional)
- Salt and pepper, to taste
- 1 tablespoon olive oil
- Fresh cilantro, for garnish (optional)
Directions:
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it with olive oil.
- In a medium bowl, whisk together the pineapple, honey, soy sauce, Dijon mustard, rice vinegar, minced garlic, and grated ginger (if using). Set aside to let the flavors combine.
- Season the salmon fillets with salt and pepper on both sides. Heat olive oil in a large skillet over medium-high heat.
- Add the salmon fillets to the skillet, skin-side down, and cook for 2-3 minutes, until the skin is crispy and golden brown.
- Flip the salmon fillets over and cook for an additional 2 minutes. Remove the skillet from the heat and transfer the salmon fillets to the prepared baking sheet.
- Spoon some of the honey pineapple glaze over the top of each salmon fillet.
- Place the salmon in the oven and bake for 8-10 minutes, or until the salmon is cooked through and flakes easily with a fork.
- Remove the salmon from the oven and spoon any remaining glaze over the top. Garnish with fresh cilantro, if desired, and serve immediately.
