Honey Pineapple Grilled Chicken

Ingredients:

  • 4 boneless, skinless chicken breasts
  • ½ cup honey
  • ½ cup pineapple juice
  • 2 tbsp soy sauce
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • 1 tsp ground ginger
  • 1 tsp black pepper
  • Pineapple slices for grilling (optional)
  • Fresh cilantro for garnish (optional)

Directions:

  1. In a small bowl, whisk together honey, pineapple juice, soy sauce, garlic, olive oil, ginger, and black pepper to make the marinade.
  2. Place the chicken breasts in a resealable plastic bag and pour the marinade over them. Seal the bag and refrigerate for at least 30 minutes (or up to 4 hours for more flavor).
  3. Preheat the grill to medium-high heat. Remove the chicken from the marinade and discard the excess marinade.
  4. Grill the chicken for 6-8 minutes on each side, or until fully cooked (internal temperature reaches 165°F/75°C).
  5. If desired, grill pineapple slices alongside the chicken for 2-3 minutes on each side until caramelized.
  6. Remove the chicken and pineapple from the grill. Let the chicken rest for a few minutes before serving.
  7. Garnish with fresh cilantro and serve with the grilled pineapple slices.
