Ingredients:
- 4 boneless, skinless chicken breasts
- ½ cup honey
- ½ cup pineapple juice
- 2 tbsp soy sauce
- 2 cloves garlic, minced
- 1 tbsp olive oil
- 1 tsp ground ginger
- 1 tsp black pepper
- Pineapple slices for grilling (optional)
- Fresh cilantro for garnish (optional)
Directions:
- In a small bowl, whisk together honey, pineapple juice, soy sauce, garlic, olive oil, ginger, and black pepper to make the marinade.
- Place the chicken breasts in a resealable plastic bag and pour the marinade over them. Seal the bag and refrigerate for at least 30 minutes (or up to 4 hours for more flavor).
- Preheat the grill to medium-high heat. Remove the chicken from the marinade and discard the excess marinade.
- Grill the chicken for 6-8 minutes on each side, or until fully cooked (internal temperature reaches 165°F/75°C).
- If desired, grill pineapple slices alongside the chicken for 2-3 minutes on each side until caramelized.
- Remove the chicken and pineapple from the grill. Let the chicken rest for a few minutes before serving.
- Garnish with fresh cilantro and serve with the grilled pineapple slices.
