Ingredients:
- 1 lb baby carrots (or regular carrots, peeled and cut into sticks)
- 3 tbsp unsalted butter, melted
- 2 tbsp honey
- 3 cloves garlic, minced
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp fresh thyme (or 1/2 tsp dried thyme)
- Fresh parsley for garnish (optional)
Directions:
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a large bowl, whisk together the melted butter, honey, minced garlic, salt, pepper, and thyme until well combined.
- Add the carrots to the bowl and toss until they are evenly coated with the honey garlic butter mixture.
- Spread the coated carrots in a single layer on the prepared baking sheet.
- Roast in the preheated oven for 20-25 minutes, or until the carrots are tender and caramelized, stirring halfway through.
- Remove from the oven and transfer to a serving dish. Garnish with fresh parsley if desired before serving.
