Honey Garlic Butter Roasted Carrots

Ingredients:

  • 1 lb baby carrots (or regular carrots, peeled and cut into sticks)
  • 3 tbsp unsalted butter, melted
  • 2 tbsp honey
  • 3 cloves garlic, minced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp fresh thyme (or 1/2 tsp dried thyme)
  • Fresh parsley for garnish (optional)

Directions:

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together the melted butter, honey, minced garlic, salt, pepper, and thyme until well combined.
  3. Add the carrots to the bowl and toss until they are evenly coated with the honey garlic butter mixture.
  4. Spread the coated carrots in a single layer on the prepared baking sheet.
  5. Roast in the preheated oven for 20-25 minutes, or until the carrots are tender and caramelized, stirring halfway through.
  6. Remove from the oven and transfer to a serving dish. Garnish with fresh parsley if desired before serving.
