Ingredients:

  • 4 lbs whole chicken, cut into pieces
  • 2 cups buttermilk
  • 1 tablespoon hot sauce (optional)
  • 2 cups all-purpose flour
  • 1 tablespoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Oil for frying (such as vegetable or peanut oil)

Directions:

  1. In a large bowl, combine the buttermilk and hot sauce. Add the chicken pieces and ensure they are well coated. Cover and refrigerate for at least 4 hours, or overnight for best results.
  2. In another bowl, mix together the flour, paprika, garlic powder, onion powder, thyme, basil, salt, and pepper.
  3. Remove the chicken from the buttermilk and let excess liquid drip off. Dredge each piece in the seasoned flour mixture, pressing gently to adhere.
  4. Heat oil in a large, deep skillet or Dutch oven to 350°F (175°C).
  5. Carefully place the chicken pieces in the hot oil, cooking in batches if necessary to avoid overcrowding. Fry for about 15-18 minutes, turning occasionally, until golden brown and cooked through (internal temperature should reach 165°F/75°C).
  6. Remove the chicken from the oil and place on a wire rack or paper towels to drain excess oil. Let cool slightly before serving.
