Ingredients:
- 1 lb ground beef
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 can (10.5 oz) cream of mushroom soup
- 1/2 cup sour cream
- 1 can (15 oz) corn, drained
- 1 cup shredded cheddar cheese
- 1 bag (32 oz) frozen tater tots
- 1 tablespoon olive oil
- Salt and pepper to taste
- Fresh parsley for garnish
Directions:
- Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.
- In a large skillet, heat olive oil over medium heat. Add chopped onion and garlic, cooking until softened, about 2-3 minutes.
- Add ground beef to the skillet and cook until browned, breaking it up as it cooks. Season with salt and pepper. Drain excess grease if necessary.
- Stir in the cream of mushroom soup, sour cream, and drained corn. Cook for 2-3 minutes, until the mixture is well combined.
- Spread the beef mixture evenly into the prepared baking dish. Sprinkle shredded cheddar cheese on top.
- Arrange the frozen tater tots in a single layer over the beef and cheese mixture.
- Bake for 25-30 minutes, or until the tater tots are golden brown and crispy.
- Garnish with fresh parsley and serve hot.
