Hearty Cowboy Beef and Tater Tot Casserole

Ingredients:

  • 1 lb ground beef
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 can (10.5 oz) cream of mushroom soup
  • 1/2 cup sour cream
  • 1 can (15 oz) corn, drained
  • 1 cup shredded cheddar cheese
  • 1 bag (32 oz) frozen tater tots
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish

Directions:

  1. Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.
  2. In a large skillet, heat olive oil over medium heat. Add chopped onion and garlic, cooking until softened, about 2-3 minutes.
  3. Add ground beef to the skillet and cook until browned, breaking it up as it cooks. Season with salt and pepper. Drain excess grease if necessary.
  4. Stir in the cream of mushroom soup, sour cream, and drained corn. Cook for 2-3 minutes, until the mixture is well combined.
  5. Spread the beef mixture evenly into the prepared baking dish. Sprinkle shredded cheddar cheese on top.
  6. Arrange the frozen tater tots in a single layer over the beef and cheese mixture.
  7. Bake for 25-30 minutes, or until the tater tots are golden brown and crispy.
  8. Garnish with fresh parsley and serve hot.
