Healthy Taco Shrimp Lettuce Wraps

Ingredients:

  • 1 pound shrimp, peeled and deveined
  • 1 tablespoon olive oil
  • 1 tablespoon taco seasoning
  • 1/2 cup cherry tomatoes, diced
  • 1/4 cup red onion, finely chopped
  • 1 avocado, diced
  • 1 cup corn (canned or frozen, thawed)
  • Juice of 1 lime
  • Salt and pepper, to taste
  • 8 large lettuce leaves (such as romaine or butter lettuce)
  • Fresh cilantro, for garnish

Directions:

  1. In a bowl, toss the shrimp with olive oil, taco seasoning, salt, and pepper until well coated.
  2. Heat a skillet over medium-high heat. Add the seasoned shrimp and cook for 2-3 minutes on each side, or until they are pink and cooked through.
  3. In a separate bowl, combine the cherry tomatoes, red onion, avocado, corn, lime juice, salt, and pepper. Gently toss to mix.
  4. To assemble, spoon some of the shrimp into each lettuce leaf, top with the corn and avocado mixture, and garnish with fresh cilantro.
