Directions:
- In a bowl, toss the shrimp with olive oil, taco seasoning, salt, and pepper until well coated.
- Heat a skillet over medium-high heat. Add the seasoned shrimp and cook for 2-3 minutes on each side, or until they are pink and cooked through.
- In a separate bowl, combine the cherry tomatoes, red onion, avocado, corn, lime juice, salt, and pepper. Gently toss to mix.
- To assemble, spoon some of the shrimp into each lettuce leaf, top with the corn and avocado mixture, and garnish with fresh cilantro.
