Grilled Peaches with Vanilla Bean Mascarpone, Honey, and Granola is a delightful, light dessert that perfectly balances sweetness and crunch. The caramelized peaches, smoky from the grill, are topped with creamy vanilla mascarpone, offering a smooth contrast to the crunchy granola and rich honey drizzle.
Ingredients:
- 4 ripe peaches, halved and pitted
- 1/2 cup mascarpone cheese
- 1 vanilla bean, split and scraped (or 1 teaspoon vanilla extract)
- 2 tablespoons honey, plus extra for drizzling
- 1/4 cup granola (store-bought or homemade)
- 1 tablespoon butter (for grilling)
- Fresh mint or basil for garnish (optional)
Directions:
- Prepare the peaches: Preheat your grill or grill pan over medium heat. Brush the cut sides of the peach halves with melted butter to prevent sticking.
- Grill the peaches: Place the peaches cut side down on the grill and cook for about 3-4 minutes until grill marks form and the peaches are slightly softened. Flip and grill for an additional 1-2 minutes, just until warmed through.
- Make the mascarpone mixture: While the peaches are grilling, in a small bowl, combine the mascarpone cheese, scraped vanilla bean (or vanilla extract), and 2 tablespoons of honey. Mix until smooth and well combined.
- Assemble the dish: Once the peaches are grilled, remove them from the heat. Spoon a generous amount of vanilla bean mascarpone onto the center of each peach half.
- Top with granola: Sprinkle granola over the mascarpone and drizzle with a little more honey for extra sweetness. Garnish with fresh mint or basil, if desired.
- Serve immediately as a light dessert or a breakfast treat.
