Ingredients:
- 2 boneless, skinless chicken breasts
- 4 sub rolls
- 1/2 cup white BBQ sauce (see recipe below)
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- 1 cup shredded mozzarella cheese
- 1/2 cup coleslaw (optional, for garnish)
- Fresh parsley for garnish (optional)
For the White BBQ Sauce:
- 1/2 cup mayonnaise
- 2 tablespoons apple cider vinegar
- 1 tablespoon Dijon mustard
- 1 teaspoon honey
- 1/4 teaspoon garlic powder
- Salt and pepper to taste
Directions:
- Preheat grill or grill pan to medium heat. Brush the chicken breasts with olive oil and season with garlic powder, onion powder, smoked paprika, salt, and pepper.
- Grill the chicken for 6-7 minutes per side, or until the internal temperature reaches 165°F (75°C). Let the chicken rest for a few minutes before slicing into strips.
- While the chicken is grilling, prepare the white BBQ sauce by whisking together the mayonnaise, apple cider vinegar, Dijon mustard, honey, garlic powder, salt, and pepper in a small bowl.
- Slice the sub rolls and lightly toast them on the grill, if desired.
