Green Chili Chicken Soup is a vibrant and flavorful dish that warms you from the inside out. The combination of tender shredded chicken, spicy green chilies, and a medley of beans and corn creates a comforting bowl of goodness that’s perfect for any day.

Ingredients:

  • 1 lb boneless, skinless chicken breasts
  • 4 cups chicken broth
  • 1 can (15 oz) green chilies, diced
  • 1 can (15 oz) corn, drained
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Fresh cilantro, for garnish
  • Lime wedges, for serving

Directions:

  1. In a large pot, heat olive oil over medium heat. Add chopped onion and minced garlic, and sauté until the onion is translucent, about 3-4 minutes.
  2. Add the chicken breasts to the pot, followed by the chicken broth, green chilies, corn, black beans, cumin, chili powder, salt, and pepper. Bring to a boil.
  3. Reduce heat and let the soup simmer for about 20 minutes, or until the chicken is cooked through.
  4. Remove the chicken from the pot and shred it with two forks. Return the shredded chicken to the pot and stir to combine.
  5. Taste and adjust seasoning if needed. Simmer for an additional 5 minutes.
