Gourmet Grilled Cheese with Sun-Dried Tomato, Spinach, and Ricotta

Ingredients:

  • 4 slices sourdough or ciabatta bread
  • 1/2 cup ricotta cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup sun-dried tomatoes, chopped
  • 1 cup fresh spinach leaves
  • 1 tablespoon butter, softened
  • Salt and pepper to taste

Directions:

  1. Preheat a skillet over medium heat.
  2. Spread ricotta cheese evenly on two slices of bread.
  3. Top the ricotta with chopped sun-dried tomatoes and fresh spinach leaves.
  4. Sprinkle mozzarella cheese over the spinach, and season with a pinch of salt and pepper.
  5. Place the other slices of bread on top, pressing gently.
  6. Spread a thin layer of butter on the outside of each sandwich.
  7. Grill each side in the skillet for 3-4 minutes, or until golden brown and the cheese is melted.
  8. Slice and serve warm.
