Ingredients:
- 4 slices sourdough or ciabatta bread
- 1/2 cup ricotta cheese
- 1/2 cup shredded mozzarella cheese
- 1/4 cup sun-dried tomatoes, chopped
- 1 cup fresh spinach leaves
- 1 tablespoon butter, softened
- Salt and pepper to taste
Directions:
- Preheat a skillet over medium heat.
- Spread ricotta cheese evenly on two slices of bread.
- Top the ricotta with chopped sun-dried tomatoes and fresh spinach leaves.
- Sprinkle mozzarella cheese over the spinach, and season with a pinch of salt and pepper.
- Place the other slices of bread on top, pressing gently.
- Spread a thin layer of butter on the outside of each sandwich.
- Grill each side in the skillet for 3-4 minutes, or until golden brown and the cheese is melted.
- Slice and serve warm.
