For the Pie Crust:
- 1 1/2 cups all-purpose flour

- 2 tablespoons ice water
For the Cookie Pie Filling:
- 1/2 cup Nutella (hazelnut spread)
- 1/2 cup unsalted butter, softened
- 1/2 cup brown sugar, packed
- 1/4 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup chocolate chips (optional, but recommended)
For Serving (optional):
- Whipped cream or vanilla ice cream
Directions:
- Preheat your oven to 350°F (175°C). Lightly grease a 9-inch pie dish.
- To make the pie crust, combine the flour, butter, sugar, and salt in a food processor. Pulse until the mixture resembles coarse crumbs. Add the ice water one tablespoon at a time and pulse until the dough comes together.
- Turn the dough out onto a lightly floured surface and roll it out to fit the bottom and sides of the pie dish. Press the dough into the dish and trim any excess around the edges. Set aside.
- For the cookie pie filling, beat together the Nutella, softened butter, brown sugar, and granulated sugar in a large bowl until smooth and creamy.
- Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
- In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients and mix until combined.
- Fold in the chocolate chips (if using).
- Pour the cookie pie filling into the prepared pie crust, spreading it out evenly.
- Bake for 30-35 minutes, or until the center is set and the edges are golden brown. The center may still be a little soft, but it will firm up as it cools.
- Let the pie cool for at least 15 minutes before serving. Top with whipped cream or a scoop of vanilla ice cream for an extra treat.
