Ingredients:
- 1 3/4 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 cup unsweetened cocoa powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup buttermilk
- 1/2 cup vegetable oil
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup chocolate chips
- 1 cup caramel sauce (plus extra for drizzling)
Directions:
- Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or spray with non-stick cooking spray.
- In a large mixing bowl, whisk together the flour, sugar, cocoa powder, baking soda, and salt until well combined.
- In another bowl, mix together the buttermilk, vegetable oil, eggs, and vanilla extract until smooth.
- Gradually add the wet ingredients to the dry ingredients, stirring until just combined. Fold in the chocolate chips.
- Fill each muffin cup about halfway with the batter. Add a spoonful of caramel sauce to the center of each muffin, then top with more batter until each cup is about three-quarters full.
- Bake for 18-20 minutes, or until a toothpick inserted into the muffins comes out clean (with a few chocolate crumbs).
- Let the muffins cool for a few minutes in the pan before transferring them to a wire rack. Drizzle with additional caramel sauce before serving.
