Gooey Chocolate Caramel Delight Muffins

Ingredients:

  • 1 3/4 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup buttermilk
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup chocolate chips
  • 1 cup caramel sauce (plus extra for drizzling)

Directions:

  1. Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or spray with non-stick cooking spray.
  2. In a large mixing bowl, whisk together the flour, sugar, cocoa powder, baking soda, and salt until well combined.
  3. In another bowl, mix together the buttermilk, vegetable oil, eggs, and vanilla extract until smooth.
  4. Gradually add the wet ingredients to the dry ingredients, stirring until just combined. Fold in the chocolate chips.
  5. Fill each muffin cup about halfway with the batter. Add a spoonful of caramel sauce to the center of each muffin, then top with more batter until each cup is about three-quarters full.
  6. Bake for 18-20 minutes, or until a toothpick inserted into the muffins comes out clean (with a few chocolate crumbs).
  7. Let the muffins cool for a few minutes in the pan before transferring them to a wire rack. Drizzle with additional caramel sauce before serving.
