Golden, Crispy Parmesan & Mozzarella Bites

Ingredients:

  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 cup panko breadcrumbs
  • 1/4 cup fresh parsley, chopped
  • 2 large eggs
  • 1/4 cup all-purpose flour
  • Salt and black pepper to taste
  • Olive oil spray, for baking

Directions:

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine the mozzarella cheese, Parmesan cheese, and parsley. Mix well until the ingredients are evenly distributed.
  3. In a separate bowl, whisk the eggs, and in another bowl, spread the flour with a pinch of salt and pepper.
  4. Form the cheese mixture into small, bite-sized balls.
  5. Roll each cheese ball in the flour, then dip in the egg, and finally coat with panko breadcrumbs. Press lightly to ensure the breadcrumbs stick well.
  6. Place the cheese bites on the baking sheet and spray them lightly with olive oil.
  7. Bake for 12-15 minutes, or until golden and crispy, turning halfway for even browning.
