Directions:

  1. Cook the pasta according to package instructions. Drain and set aside, reserving 1/2 cup of pasta cooking water.
  2. While the pasta cooks, heat olive oil in a large skillet over medium-high heat. Season the chicken breasts with salt, pepper, garlic powder, and onion powder. Cook the chicken for 6-7 minutes per side until golden brown and cooked through (internal temperature should reach 165°F/74°C). Remove the chicken from the skillet and set aside to rest.
  3. In the same skillet, add the minced garlic and cook for 1 minute until fragrant.
  4. Add the heavy cream and chicken broth to the skillet, stirring to combine. Bring the mixture to a simmer and cook for 3-4 minutes, allowing the sauce to thicken slightly.
  5. Stir in the Parmesan cheese, mozzarella cheese, Italian seasoning, and butter. Cook, stirring, until the cheese is melted and the sauce is creamy. Adjust the seasoning with salt and pepper to taste.
  6. Slice the cooked chicken into thin strips or bite-sized pieces.
  7. Add the cooked pasta to the skillet, tossing to coat the noodles in the creamy sauce. If the sauce is too thick, add the reserved pasta cooking water a little at a time until you reach your desired consistency.
  8. Top with sliced chicken and garnish with fresh parsley and optional lemon zest for a burst of freshness.
