Garlic Parmesan Chicken Lasagna Roll-Ups

  1. Ingredients:
  • 9 lasagna noodles
  • 2 cups cooked, shredded chicken
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 cups spinach, chopped
  • 2 cloves garlic, minced
  • 1/2 tsp Italian seasoning
  • Salt and pepper, to taste
  • 1 jar (24 oz) marinara sauce
  • Fresh parsley, chopped (for garnish)

Directions:

  1. Preheat your oven to 375°F (190°C). Cook the lasagna noodles according to package instructions, then drain and set aside.
  2. In a mixing bowl, combine the shredded chicken, ricotta cheese, 1/2 cup mozzarella cheese, grated Parmesan cheese, chopped spinach, minced garlic, Italian seasoning, salt, and pepper. Mix until well combined.
  3. Spread a thin layer of marinara sauce on the bottom of a 9×13-inch baking dish.
  4. Take a cooked lasagna noodle and spread a generous amount of the chicken mixture over it. Roll the noodle up tightly and place it seam-side down in the baking dish. Repeat with the remaining noodles.
  5. Pour the remaining marinara sauce over the roll-ups and sprinkle with the remaining mozzarella cheese.
  6. Cover the dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.
  7. Garnish with chopped parsley before serving.
