Ingredients:

  • 4 boneless, skinless chicken breasts
  • 1 lb baby potatoes, halved
  • 4 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon dried Italian herbs
  • 1 teaspoon paprika
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Directions:

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, combine the halved baby potatoes with 2 tablespoons of olive oil, half the minced garlic, Italian herbs, paprika, salt, and pepper. Toss to coat and spread the potatoes on one side of a large baking sheet.

  4. Place the chicken on the baking sheet alongside the potatoes.
