These Garlic Chive Mashed Potato Puffins are an irresistible combination of creamy mashed potatoes and savory garlic and cheddar cheese, baked to golden perfection. The crispy breadcrumb topping adds the perfect crunch to the tender, flavorful interior, making each bite a delight.

  1. Ingredients:
  • 4 large russet potatoes, peeled and cubed
  • 2 tablespoons butter
  • 1/4 cup whole milk
  • 1/2 cup grated cheddar cheese
  • 1/4 cup sour cream
  • 3 cloves garlic, minced
  • 1/4 cup fresh chives, chopped
  • Salt and pepper to taste
  • 1/4 cup breadcrumbs
  • 1 tablespoon olive oil for greasing muffin tin

Directions:

  1. Preheat your oven to 375°F (190°C). Grease a muffin tin with olive oil or cooking spray.
  2. Boil the cubed potatoes in salted water for about 10-12 minutes, or until they are fork-tender. Drain the potatoes and return them to the pot.
  3. Mash the potatoes with butter, milk, and sour cream until smooth and creamy. Add the minced garlic, grated cheddar cheese, chopped chives, salt, and pepper. Stir to combine.
  4. Spoon the mashed potato mixture into the muffin tin, filling each cup almost to the top. Sprinkle the breadcrumbs over the top of each puffin for a crispy crust.
  5. Bake for 20-25 minutes, or until the tops are golden brown and slightly crispy.
  6. Allow the puffins to cool for a few minutes before carefully removing them from the muffin tin. Serve warm.
