Ingredients:
- 1 lb large shrimp, peeled and deveined
- 8 oz pasta (spaghetti, linguine, or your choice)
- 4 tablespoons unsalted butter
- 4 cloves garlic, minced
- 1/2 teaspoon red pepper flakes (optional)
- 1/2 cup dry white wine (or chicken broth)
- 1 tablespoon fresh lemon juice
- Zest of 1 lemon
- 1/4 cup fresh parsley, chopped
- Salt and pepper to taste
- 1 tablespoon olive oil (for cooking the shrimp)
Directions:
- Cook the pasta according to the package directions, reserving 1/2 cup of pasta water before draining. Set the pasta aside.
- In a large skillet, heat olive oil over medium-high heat. Add the shrimp and cook for 2-3 minutes per side, or until they turn pink and opaque. Remove the shrimp from the skillet and set them aside.
- In the same skillet, melt the butter over medium heat. Add the minced garlic and red pepper flakes (if using), and sauté for 1-2 minutes until the garlic is fragrant, being careful not to burn it.
- Add the white wine (or chicken broth) to the skillet, scraping up any bits from the bottom of the pan. Let it simmer for 2-3 minutes until the liquid reduces slightly.
- Stir in the lemon juice and lemon zest. Return the cooked shrimp to the skillet, tossing them to coat in the garlic butter sauce. Season with salt and pepper to taste.
- Add the cooked pasta to the skillet and toss to combine. If the sauce seems too thick, add some of the reserved pasta water to loosen it up.
- Garnish with fresh parsley and serve immediately.
