Garlic Butter Chicken Breasts Stuffed with Mushrooms and Cheese

Cheesy Garlic Butter Mushroom Stuffed Chicken is a dish that combines savory, tender chicken with a rich, flavorful filling of garlic butter mushrooms and melted cheese. - Ingredients:
 
- 4 boneless, skinless chicken breasts
 - 2 cups mushrooms, finely chopped
 - 3 tablespoons unsalted butter
 - 4 cloves garlic, minced
 - 1/2 cup cream cheese, softened
 - 1/2 cup shredded mozzarella cheese
 - 1/4 cup grated Parmesan cheese
 - 1 teaspoon dried thyme
 - 1 teaspoon dried parsley
 - Salt and pepper, to taste
 - 1 tablespoon olive oil (for searing)
 - Fresh parsley (for garnish)
 
Directions:
- Preheat your oven to 375°F (190°C).
 - In a skillet, melt 2 tablespoons of butter over medium heat. Add the garlic and cook for 1 minute, then add the chopped mushrooms. Sauté for 5-7 minutes, until the mushrooms release their moisture and begin to brown.
 - Stir in the cream cheese, mozzarella, Parmesan, dried thyme, and parsley. Continue to cook for 2-3 minutes until the cheeses are melted and everything is well combined. Season with salt and pepper to taste. Remove from heat and set aside.
 - Using a sharp knife, carefully cut a pocket into each chicken breast (be sure not to cut all the way through).
 - Stuff each chicken breast with the mushroom mixture, securing the opening with toothpicks if necessary.
 - Heat olive oil in an oven-safe skillet over medium-high heat. Season the chicken breasts with salt and pepper, then sear them in the hot skillet for 2-3 minutes per side, until golden brown.
 - Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is fully cooked and reaches an internal temperature of 165°F (74°C).
 - Remove from the oven, garnish with fresh parsley, and serve hot.
