For the Chicken Bites:
- 1 lb chicken breast, cut into bite-sized pieces
- 2 tbsp olive oil
- 4 tbsp unsalted butter, divided
- 3 cloves garlic, minced
- 1/2 tsp paprika
- 1/4 tsp salt
- 1/4 tsp black pepper
- 2 tbsp chopped parsley (for garnish)
For the Creamy Parmesan Pasta:
- 8 oz fettuccine or spaghetti
- 2 tbsp butter
- 2 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1/4 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp red pepper flakes (optional)
Directions:
- Cook the pasta: Boil pasta according to package instructions. Drain and set aside.
- Sauté the chicken bites: In a skillet over medium heat, heat olive oil and 2 tbsp butter. Add chicken pieces, paprika, salt, and pepper. Cook for 6-8 minutes, stirring occasionally, until golden brown and cooked through. Remove chicken and set aside.
- Make garlic butter sauce: In the same skillet, melt the remaining 2 tbsp butter and sauté garlic until fragrant (about 1 minute). Toss the chicken back into the skillet and stir to coat evenly. Garnish with parsley and keep warm.
- Prepare the creamy Parmesan sauce: In a separate pan, melt butter and sauté garlic for 30 seconds. Add heavy cream, salt, pepper, and red pepper flakes. Simmer for 3-4 minutes, stirring occasionally.
- Stir in the Parmesan cheese until melted and smooth. Add the cooked pasta to the sauce and toss to coat.
- Assemble: Plate the creamy Parmesan pasta and top with the garlic butter chicken bites. Serve immediately.
