- 2 large yellow onions, thinly sliced
- 1 cup long-grain white rice
- 2 cups beef broth
- 1/2 cup dry white wine (optional)
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 cup grated Gruyère or Swiss cheese
- Fresh thyme, for garnish
- Directions:
- In a large skillet, melt butter over medium heat. Add sliced onions and cook for 20-25 minutes, stirring frequently, until onions are deeply caramelized.
- Add rice to the skillet with onions, stirring for 1-2 minutes to lightly toast the rice.
- Pour in beef broth and white wine (if using), then add salt and pepper. Stir to combine.
- Bring to a boil, then reduce heat to low, cover, and simmer for 18-20 minutes, or until rice is tender and liquid is absorbed.
- Remove from heat, sprinkle Gruyère cheese on top, and cover for a few minutes to melt.
- Garnish with fresh thyme before serving.
