French Onion Soup Rice

    • Ingredients:
      • 2 tbsp unsalted butter
      • 2 large yellow onions, thinly sliced
      • 1 cup long-grain white rice
      • 2 cups beef broth
      • 1/2 cup dry white wine (optional)
      • 1/2 tsp salt
      • 1/4 tsp black pepper
      • 1/2 cup grated Gruyère or Swiss cheese
      • Fresh thyme, for garnish
    • Directions:
      1. In a large skillet, melt butter over medium heat. Add sliced onions and cook for 20-25 minutes, stirring frequently, until onions are deeply caramelized.
      2. Add rice to the skillet with onions, stirring for 1-2 minutes to lightly toast the rice.
      3. Pour in beef broth and white wine (if using), then add salt and pepper. Stir to combine.
      4. Bring to a boil, then reduce heat to low, cover, and simmer for 18-20 minutes, or until rice is tender and liquid is absorbed.
      5. Remove from heat, sprinkle Gruyère cheese on top, and cover for a few minutes to melt.
      6. Garnish with fresh thyme before serving.
