French Onion Grilled Cheese

Ingredients:

  • 1 large yellow onion, thinly sliced
  • 2 tablespoons unsalted butter
  • 1/2 teaspoon salt
  • 1 teaspoon sugar
  • 1/4 cup beef broth (optional, for extra flavor)
  • 4 slices sourdough or French bread
  • 2 tablespoons mayonnaise (optional, for toasting)
  • 4 slices Gruyère cheese (or Swiss cheese)
  • 2 slices provolone cheese
  • 1/4 teaspoon fresh thyme leaves (optional, for garnish)

Directions:

  1. Caramelize the Onions: In a skillet over medium heat, melt butter. Add sliced onions, salt, and sugar. Stir to coat and cook for 25-30 minutes, stirring occasionally, until onions are deeply caramelized. Add a splash of beef broth if using, and let cook until absorbed. Remove onions from skillet and set aside.
  2. Assemble the Sandwich: Spread a thin layer of mayonnaise on one side of each bread slice for extra toasting. Place 2 slices of Gruyère cheese on the un-mayoed side of one slice of bread, top with half the caramelized onions, and add a slice of provolone. Place another slice of bread on top, mayonnaise side out. Repeat for the second sandwich.
  3. Grill the Sandwich: Heat a skillet over medium heat. Place sandwiches in the skillet, grilling each side for 3-4 minutes until the bread is golden and the cheese is melted and gooey.
  4. Remove from skillet, garnish with fresh thyme if desired, and serve hot for a melty, savory delight.
