- French Onion Chicken Bake
- Ingredients:
- 4 boneless, skinless chicken breasts
- 2 large onions, thinly sliced
- 1 tablespoon olive oil
- 2 tablespoons butter
- 1 tablespoon balsamic vinegar
- 2 cloves garlic, minced
- 1 teaspoon fresh thyme, chopped (or 1/2 teaspoon dried thyme)
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 1/2 cups beef broth
- 1 1/2 cups shredded Gruyère or mozzarella cheese
- 1 tablespoon fresh parsley, chopped (for garnish)
Directions:
- Preheat the oven to 375°F (190°C).
- In a large skillet, heat olive oil and butter over medium heat. Add the sliced onions and cook for about 20-25 minutes, stirring frequently, until the onions are caramelized and golden brown.
- Add the balsamic vinegar, garlic, thyme, salt, and pepper to the onions and cook for an additional 2 minutes.
- Pour in the beef broth and let the mixture simmer for 5 minutes, allowing the flavors to blend.
- Place the chicken breasts in a baking dish, and pour the caramelized onion mixture over the chicken.
- Sprinkle the shredded cheese over the top.
- Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and the cheese is bubbly and golden.
- Garnish with fresh parsley before serving.
