  2. Ingredients:
  • 4 boneless, skinless chicken breasts
  • 2 large onions, thinly sliced
  • 1 tablespoon olive oil
  • 2 tablespoons butter
  • 1 tablespoon balsamic vinegar
  • 2 cloves garlic, minced
  • 1 teaspoon fresh thyme, chopped (or 1/2 teaspoon dried thyme)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 1/2 cups beef broth
  • 1 1/2 cups shredded Gruyère or mozzarella cheese
  • 1 tablespoon fresh parsley, chopped (for garnish)

Directions:

  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet, heat olive oil and butter over medium heat. Add the sliced onions and cook for about 20-25 minutes, stirring frequently, until the onions are caramelized and golden brown.
  3. Add the balsamic vinegar, garlic, thyme, salt, and pepper to the onions and cook for an additional 2 minutes.
  4. Pour in the beef broth and let the mixture simmer for 5 minutes, allowing the flavors to blend.
  5. Place the chicken breasts in a baking dish, and pour the caramelized onion mixture over the chicken.
  6. Sprinkle the shredded cheese over the top.
  7. Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and the cheese is bubbly and golden.
  8. Garnish with fresh parsley before serving.
