Ingredients:

  • 4 boneless, skinless chicken breasts
  • 1 packet ranch seasoning mix
  • 1 can cream of chicken soup
  • 1 can (10 oz) diced tomatoes with green chilies (drained)
  • 1 cup shredded cheddar cheese
  • 1/2 cup chicken broth
  • Salt and pepper to taste
  • Fresh parsley (for garnish, optional)

Directions:

  1. In a slow cooker, place the chicken breasts in the bottom. Season with salt and pepper.
  2. In a bowl, mix together the ranch seasoning, cream of chicken soup, drained diced tomatoes, and chicken broth until well combined.
  3. Pour the mixture over the chicken in the slow cooker, ensuring the chicken is well covered.
  4. Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is tender and cooked through.
  5. About 30 minutes before serving, sprinkle the shredded cheddar cheese over the top, cover, and allow it to melt.
  6. Serve the chicken over rice, pasta, or with crusty bread, garnished with fresh parsley if desired.
