Ingredients:

  • 8 oz. yakisoba or udon noodles (or your preferred stir-fry noodles)
  • 2 tablespoons vegetable oil
  • 1/2 onion, thinly sliced
  • 1 bell pepper, thinly sliced
  • 1 carrot, julienned
  • 2 garlic cloves, minced
  • 1/2 cup broccoli florets, steamed
  • 2 eggs, lightly beaten
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon sesame oil
  • 1 teaspoon rice vinegar
  • 1/2 teaspoon sugar
  • 1/4 teaspoon ground black pepper
  • 1 tablespoon sesame seeds (optional)
  • 2 green onions, chopped (for garnish)

Directions:

  1. Cook the noodles according to package instructions, drain, and set aside.
  2. Heat vegetable oil in a large skillet or wok over medium-high heat. Add the onion, bell pepper, and carrot, and stir-fry for 3-4 minutes, until they start to soften.
  3. Add the garlic and cook for another 1 minute, until fragrant.
  4. Push the vegetables to the side of the pan and pour the beaten eggs into the empty space. Scramble the eggs for 2-3 minutes until cooked through, then mix them with the vegetables.
  5. Add the steamed broccoli, cooked noodles, soy sauce, oyster sauce, sesame oil, rice vinegar, sugar, and black pepper. Stir everything together and cook for an additional 3-4 minutes, allowing the flavors to meld.
  6. Remove from heat and transfer to serving plates. Garnish with sesame seeds and chopped green onions before serving.
