Elvis Presley Cake

Ingredients:

  • 1 box white cake mix (plus ingredients listed on the box)
  • 1 can (20 oz) crushed pineapple with juice
  • 1 cup granulated sugar
  • 1/2 cup chopped pecans
  • 8 oz cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 1 teaspoon vanilla extract

Directions:

  1. Prepare the white cake mix according to the package instructions. Bake in a 9×13-inch pan and let it cool.
  2. In a saucepan, combine the crushed pineapple (with juice) and granulated sugar. Cook over medium heat until the sugar dissolves and the mixture thickens slightly.
  3. Poke holes all over the cooled cake with a fork. Pour the warm pineapple mixture over the cake, spreading evenly. Let it absorb.
  4. For the frosting, beat the cream cheese and butter until smooth. Gradually add powdered sugar and vanilla extract.
  5. Spread the cream cheese frosting over the pineapple-soaked cake.
  6. Sprinkle chopped pecans on top. Chill the cake for at least 1 hour before serving.
