- 1 box white cake mix (plus ingredients listed on the box)
- 1 can (20 oz) crushed pineapple with juice
- 1 cup granulated sugar
- 1/2 cup chopped pecans
- 8 oz cream cheese, softened
- 1/2 cup unsalted butter, softened
- 4 cups powdered sugar
- 1 teaspoon vanilla extract
Directions:
- Prepare the white cake mix according to the package instructions. Bake in a 9×13-inch pan and let it cool.
- In a saucepan, combine the crushed pineapple (with juice) and granulated sugar. Cook over medium heat until the sugar dissolves and the mixture thickens slightly.
- Poke holes all over the cooled cake with a fork. Pour the warm pineapple mixture over the cake, spreading evenly. Let it absorb.
- For the frosting, beat the cream cheese and butter until smooth. Gradually add powdered sugar and vanilla extract.
- Spread the cream cheese frosting over the pineapple-soaked cake.
- Sprinkle chopped pecans on top. Chill the cake for at least 1 hour before serving.
