Easy Cannoli Cake

Ingredients

For the Cake:

1 box yellow cake mix (plus ingredients listed on the box: usually eggs, oil, and water)

1 teaspoon ground cinnamon

1/2 teaspoon almond extract

For the Cannoli Filling:

2 cups ricotta cheese

1 cup mascarpone cheese

1 cup powdered sugar

1 teaspoon vanilla extract

1/2 teaspoon ground cinnamon

1/2 cup mini chocolate chips

1/4 cup chopped pistachios (optional)

For the Frosting:

2 cups heavy cream

1/2 cup powdered sugar

1 teaspoon vanilla extract

For Garnish:

Additional mini chocolate chips

Additional chopped pistachios

Powdered sugar for dusting

Step 1: Bake the Cake

Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans. Prepare the yellow cake mix according to the package instructions, adding the ground cinnamon and almond extract to the batter. Divide the batter evenly between the prepared cake pans and bake according to the package instructions, usually 25-30 minutes, or until a toothpick inserted into the center comes out clean. Allow the cakes to cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.

Step 2: Make the Cannoli Filling

In a large bowl, combine the ricotta cheese, mascarpone cheese, powdered sugar, vanilla extract, and ground cinnamon. Beat with an electric mixer on medium speed until smooth and creamy. Gently fold in the mini chocolate chips and chopped pistachios (if using). Refrigerate the filling until ready to use.

Step 3: Prepare the Frosting

In a large bowl, beat the heavy cream, powdered sugar, and vanilla extract with an electric mixer on high speed until stiff peaks form. Be careful not to overbeat. Refrigerate the frosting until ready to use.

Step 4: Assemble the Cake

Once the cakes are completely cooled, place one cake layer on a serving plate. Spread half of the cannoli filling evenly over the top. Place the second cake layer on top and spread the remaining filling over the top. Use a spatula to smooth the filling evenly.

Step 5: Frost the Cake

Frost the top and sides of the cake with the whipped cream frosting. Smooth the frosting with a spatula for a clean finish.

Step 6: Garnish and Serve
