Ingredients:
- 1 cup powdered sugar
- 2 tablespoons coconut oil (melted)
- 1/2 teaspoon peppermint extract
- 1/4 cup sweetened condensed milk
- 1 cup dark chocolate chips (or dairy-free chocolate chips)
Directions:
- In a mixing bowl, combine the powdered sugar, melted coconut oil, peppermint extract, and sweetened condensed milk. Stir until smooth and fully combined.
- Shape the mixture into small, round patties (about 1 inch in diameter) using your hands or a spoon. Place them on a parchment-lined baking sheet.
- Freeze the patties for 20-30 minutes to firm up.
- While the patties are freezing, melt the dark chocolate chips in a microwave-safe bowl in 30-second intervals, stirring in between until smooth and fully melted.
- Once the patties are firm, dip each one into the melted chocolate, covering it completely. Return the chocolate-dipped patties to the parchment-lined baking sheet.
- Freeze the chocolate-covered patties for another 15-20 minutes, or until the chocolate is fully set.
- Store the peppermint patties in an airtight container in the freezer for up to 2 weeks.
